YOu know, I'm going to try this in a "mini" version and see how it comes out. Agreed, duplicating the above pictue in miniature will be difficult, but the flavor would be similar.

Nueske's bacon would eliminate the need for a smoker. And then you could slow cook this bad boy on a broiler rack in the oven. Worth a try. I'll report.
