On their 20ga choke tubes there are numbers....0,5,10,15. Am I correct in assuming this number represents the amount of constriction? 0=cyl, 5=skeet, etc ??

5 for skeet, but they do pattern a bit tighter than other similar constriction chokes, especially in subs.

That is sort of true. Here are the typical constrictions for a 12 gauge bore. Steps are generally in 5 thousandths between constrictions.
Skeet .005"
IC .010
LM .015
Mod .020
ImpMod .025
LF .030
Full 0.035

If you are measuring a sub gauge these restrictions would be different. A 20 gauge would have say 0.004" steps between chokes and a 28 would be maybe .003.
