I know the stock and barrel differences between the two but was wondering if poi is different.

with the 1100 trap that has the montecarlo stock the poi will be higher, i had a classic trap that shot 70/30 out of the box

And of course, the field models are famous for their 50/50 (or less!) POI.

Really depends on how you hold it and how it fits you. Trap is a game of shooting rising targets so you ideally want a POI that is primarily above the barrel. A high percentage of sporting targets are starting to descend at the breakpoint so you want a much flatter pattern 60/40 or 50/50 is more ideal. Trap can be anywhere from 60/40 if you like to touch the target on up to 100%. If you mount both stocks the same the Sporting model should have a lower POI, only one way to know for sure......put em on paper.
