By 'a gun' I assume you mean the receiver, forend iron and barrel. I recently got a quote to reblue a receiver for $200 on a Perazzi. I assume I could add another $2-300 for the other parts.
Only sure way to get an accurate estimate is to call or email the gunsmith you plan to deal with.

Polish and blue: A few hours, Disassembly, polish, blue, coat with oil and let sit 24 hrs. then clean and assemble. Polishing takes the most time, bluing is the easy part.
