Flny evidently not many waterfowlers on this site have eaten eider. I have never eaten any but Googled recipe for eider and found a lot of info. I think you will find it interesting. Good luck .
Oldsquaw?? Never got a crack at one of those hunting here in the Midwest. I would have put it on the wall so I guess I saved some money by not getting a shot.
I had to skin 9 Eiders and 1 Oldsquaw to mount for a taxidermist I do work for on occasion.
Though maybe jerky them, but the first one had a gullet full of clams. I then said I can afford steak.
I never skun a bird that stunk so bad.
