We had some bear meat still left from my sons bear and kept all the fat from the pigs we just butchered. I ordered all my seasons from Sausage Maker.com The wife and I did 10lbs regular brats and 15lbs cheddar brats.
As for the instructions we use the amount of season recommended but none of the other stuff I substituted it for beer. Brats need to be moist and don't over stuff your casings.
