I have a very similar pair to these - INOX by FAMILY - from Germany, large handles (plastic) and very substantial - I have yet to find them lacking.I was looking last year and ordered these from Amazon. They have been great so far, no regrets.
Have cut the backbones out of turkeys and chickens with ease for spatchcock.

I would second this. There is a pair for about $40 that can cut pennies without dulling.Search out “trauma shears”. Since I worked as an EMT for 20 years, I used what I had on hand. The most expensive pair runs $15-20 and they’re tough as nails. I’ve cut seat belts and even shoes with them.

Good kitchen shears for well too. Wusthoff classics works well and holds its edge but they come apart to wash. Not as ideal for a working pair.
edit: they are a little pricier than I thought but worth it from what I’ve seen from EMTs and farmhands alike.
