I am looking at buying a shotgun that has "barrel work by Tom Wilkinson" as one of its major selling points. However, there is no markings on it to prove the work was done. Does Mr. Wilkinson sign his work?

Most, but not all, are stamped on the bottom of the monobloc. No stamp, no paperwork, = no sale.

I don't mind a little barrel work as long as it has been done by the best.

I also understand that Tom Wilkinson keeps records of his work. You could contact him with the serial number to verify the work done.

He is the best. Mtn Gun, call him and see if the gun/serial number is in his file. I believe he files by the owner's name. Do you know who had the barrel done? Some are not willing to spend the bucks for his work, but in reality, how can you expect a mass produced barrel to be right or close to perfect?
