Unforgetable Meatloaf

    Thought I would contribute to the recipes.

    2 lbs. Ground Round
    1 lbs. ground pork
    1 Onion, preferred Vidalia or Sweet
    1 Large Green Pepper
    2 large eggs
    2 slices of bread
    ½ cup of whole milk
    2 teaspoons of A-1
    3 strips of bacon.

    Mix all meats, eggs and milk in large mixing bowl. Dice into medium pieces ½ of the onion and ½ of the green pepper and mix into bowl. Take the 2 pieces of bread and roll between hands so they produce very small pieces. Put bread pieces and A-1 into bowl and thoroughly mix. Preheat oven to 375. Form meat loaf and place into a baking pan. Leave enough space between meat and sides of pan to collect the grease. Slice onion and green pepper long and thin slices and put on top of meat loaf then lay the bacon length wise on top. Finish by putting thin lines of ketchup length wise. Cover the pan with aluminum foil peaking in the middle like a tent. Important part- bake for 55 mins. Then remove and drain ¾ of the grease from the pan. Bake for another 20 mins without the aluminum foil cover. YOU ARE READY! Mashed potatoes with gravy , green beans, corn or carrots. Enjoy!

    SECRET – 1) bread crumbs, milk and eggs prevent the meat from getting too firm. 2) Bacon prevents meatloaf from getting dry. PLUS…… bacon adds flavor that enhances the green pepper and onion.

    Stove top stuffing and a can of cream of mushroom soup. Yes just the way I fix it only with these sub. UNREAL good.

    Substitute the green peppers with red or yellow peppers. They are sweeter and take the bite out of the pepper. Substitute the A-1 with Worschester sauce and add 1 teaspoon of poultry seasoning and it comes out excellent. Bulge.

    Kicked up Meatloaf

    2 lbs. Ground Round

    1 lbs. ground pork

    1 large Onion, diced

    1 large carrot shredded

    3 cloves garlic, diced

    3 large eggs

    3 tablespoons of A-1 or Worchestershire sauce

    Salt & pepper to taste

    ¼ cup catsup

    2 cups Quaker Quick Oats



    Saute onion, carrot and garlic until softened.
    Place all ingredients in except oats in a bowl and mix.
    Add oats a little at a time while mixing until the mix is firm enough to hold a loaf shape … more or less oats may be necessary.

    Bake at 400°F for an hour.

    Let stand for 20 minutes before slicing.

    Ahab..... I can dig it! However, I've found that the bacon on top adds soooooo much to the meat. Also, I question sauteing the veggies. Putting them in the mix raw will soften them while baking but will also absorb the flavor into the meat. Sautaing cooks the flavors out.

    1 lb ground pork, 1 pkg Lipton Onion Soup Mix, 1/2 cup bread crums, 1/2 cup crushed saltines, 1/2 lg onion diced, 2 eggs, mixed up real good, spray meat loaf dish w/non-stick spray, form the meat loaf, sprinkle bread crumbs on top, squeeze catsup on top, sprinkle bacon bits on top, bake in 350 degree oven for
    1 hour and 15 minutes, DELECIOUS. I just finished making one.

    You can also use cup cake pan, spray w/ non stick spray and bake for 35 minutes.
    you should get 12 small meatloafs cuts cooking time in half.

    And... he's been milking that one song for 40 years.
