Turkey with bacon for roasting

    Has anyone ever placed bacon strips on top of the turkey breast and then cover it with a brown paper bag before roasting? My former neighbor used to do this all the time and as I recall, the turkey came out very moist and flavorful and it also self-basted. Please let me know!

    Yes it works, but your neighbor was probably using unbleached parchment paper. I would not use a paper bag in the oven. You can also put the bacon strips on it, then put it in a turkey roasting bag too.

    I wrap quail and pheasant in bacon to keep them from drying out.

    I just cooked one Monday night. Laid strips of bacon to cover the breast, couple of apples inside and celery sticks and put in a roasting bag. Very good bacon. The turkey was also good.

    We have gotten the same good results injecting bacon grease just under the breast skin and brushing it on the outer skin...just saved the grease and pan drippings from breakfast

    Make a pan of cornbread dressing; flash brown lightly quail in skillet; then wrap in smoked bacon and place the quail in the dressing. Be sure to call me.

    My wife uses salt port cut into thin slab. These are laid over the breast and sides then covered with cheese cloth. The bird is tented in aluminum foil and roasted. The last hour she untents it to brown up the skin.
