Tomato Soup

    This goes over well at my house. Very good as a vegetarian lunch and extremely satisfying. Chop vegetables and sauté till just about cooked. 2 carrots, 2 celery stalks, 1/2 zucchini, 1/2 green pepper. Carrots take longer than the rest so begin with those alone for about3 or 4 minutes on med heat. the ingredients and pics of this process.

    Use any soup as a base. Tomato jsuice would work as well. Rough chop the stewed tomatoes and add juice and about 1/2 jar of traditional Mexican style salsa.

    Bring it back to a bubbl boil for aobut 5-10 minutes, turn off heat, and leave covered. It will sit well on your stove for hours without degrading. Once you uncover it, then find a place in your fridge. this makes about 6 meals. I'll comment some more as this goes along.

    Too, I have a new flatbread low cal lunch that I like a lot. Still working thru the best way to make that. I essentially am replicating a recipe form a dinner I got at Doolittles in Alexandria. MN. But so far, so good.

    last pic of the sauté is showing about a 2 TB of chopped garlic. Optional. But I am a garlic fan. I've duplicated a pic above and may be missing one. I'll check and get back

    Looks more like Minestrone Soup to me, not Tomato Soup.

    Looks great! I'll have to try it. Gotta agree with HSLDS though, it is mid July where are the fresh tomatoes?
