OT Venison Summer Sausage Recipe

    Need some good summer sausage, slim jim recipe's for venison. Back in my AF days a good buddy from Wisconsin always brought back some from home. He gave me the recipe from a small german place from around there. The ex wife has them. Please help a southern boy out. I've got the smoked sausage down but never been able to come across anything better than what came from his wisconsin area.

    I have not tried to make cotto salami or summer sausage from scratch. I have used a packaged mix by Hi-Country "Timber Ridge Old Style Salami" for salami that is very good. It's about $16 for a package that makes 30lbs of sausage. I get it from Wholesale Sports (used to be Sportsmans Warehouse.)

    There are some pretty good forums at www.sausagemaking.org

    I usually mix venison 50/50 with ground pork.
