O/T Polish Rice Pie

    Anyone ever have rice pie for Easter? My 86yr old mother-in-law makes the best. I don't wannna brag or anything, but put down about 6 pieces today, an it was GOOOOOOODDD! Puablo

    However, I did notice, I have a little indigestion now...do ya think I ate too much of this pie???

    This is the recipe my sister's husband uses for an Easter rice pie:

    1 cup ricotta cheese<br>1/2 cup cooked rice at room temp.<br>1 cup sugar<br>4 eggs<br>1 tbsp. cinnamon<br>1/2 tsp. all-spice (or to taste)<br>2 tsp pure vanilla extract<br>2 tsp lemon extract<br>2 unbaked 9" pie crusts
    Preheat oven to 350ยบ. In a bowl, combine the rice and the ricotta. In a separate bowl, beat three of the eggs. Do not whip. Add one third of the beaten egg at a time to the rice/cheese and mix to combine. Add sugar, spices and extracts. Pour into 1 unbaked pie shell and use the second pie shell as a top crust. Brush the top crust with a wash made from the 4th egg beaten with a tbsp. of water until foamy. Vent the top crust by poking with a fork or a small knife.

    Bake for 45 minutes or until top is golden brown.

    If you mix 1 Tablespoon of powdered sugar with that last egg and then put it on the top crust you will get a lot better top crusted pie.
