A silly question: Why is it called upland game and what sort of game falls into this category?

Probably because it's shot inland (upland) from wetlands (marshes, etc.).

Upland birds are pheasants, grouse, quail, doves, chukar, etc. Non-aquatic birds.

Crows used to be upland, but now they're migratory.

Turkeys are not generally considered to be upland.
