Is there a company that make pitch shims for behind your recoil pad? Or should you just trim the stock?

They sure do. I have seen them at Gamaliels but I can't remember what company makes them.

Click the link above and it takes you to the page at Gamaliels.

I use a Kick-Eez too. Their inexpensive and easy to install. They come in a couple different thicknesses.

With the high demand for pitch these days you may have to settle for bio-shims...

    Just sayin'

Pitch shims will increase the LOP like any shim, and when you put a pad back on the screw holes in the pad will be at a different angle and may not line up with the ones in the stock. You will also need a bigger pad, because it have to be trimmed at an angle to be in line with the stock.

In other words, it's not as simple as just changing the pitch with a shim.
